Spring break dessert!

Ingredients

Cake
  • 1 2/3 Cups AP Flour
  • 3/4 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 6 Tbsp Melted Unsalted Butter
  • 1 Cup Truvia Sweet Complete Granulated All Purpose Sweetener
  • 2/3 Cup Buttermilk
  • 3 Tbsp Fresh Squeezed Orange Juice
  • 1/4 Cup Vanilla Yogurt
  • 1 1/2 Tbsp Vegetable Oil
  • 2 Large Eggs
  • 1 Tsp Vanilla
  • 3 Cups Chopped Strawberries

Crumble

  • 5 Tbsp Softened Butter
  • 3/4 Cup AP Flour
  • 1/3 Cup Truvia Sweet Complete Granulated All Purpose Sweetener
  • 1/4 Cup Truvia Sweet Complete Brown Sweetener
  • 2 1/2 Tsp Cinnamon
  • Pinch of Salt
  • Icing

  • 1/2 Cup Truvia Sweet Complete All Purpose Sweetener
  • 1 Tbsp Warm Milk
  • Instructions

    1. Preheat oven to 350F and prepare a 9" Springform pan with nonstick spray and parchment paper.
    2. Begin by making the crumble it will need to set in the fridge during the preparation of the cake.
    3. In a bowl add the flour, sweeteners, cinnamon, and salt and give it a good mix.
    4. Next, add the unsalted butter and begin to press it into the flour mixture. This is great to do with clean hands. Continue pressing until it is all combined and you have a wet crumbly mixture.
    5. Cover in plastic wrap and refrigerate until you're ready to cover the cake.
    6. In a separate bowl add all the cake wet ingredients making sure they're all room temperature so that the mixture can combine with ease. Once you have added all of the wet ingredients give it a good stir until its all combined.
    7. Sift the dry ingredients and add it to the wet ingredients in two additions mixing in between. Mix until combined but do not over mix.
    8. Add 1 cup of chopped strawberries to the batter and mix until combined.
    9. Pour the batter into the prepared pan.
    10. Next add 1 Tbsp of flour to the two cups of strawberries remainning and mix until they're covered.
    11. Spread about 3/4 of the crumble evenly arround the top of the strawberries.
    12. Bake for 55-60 minutes or until a toothpick inserted in the center comes out mostly clean. It may be a little wet from the crumble and strawberries but should not have raw cake batter.
    13. Allow the cake to cool completely.
    14. Once the cake has cooled remove from the springform pan and add the sugar and warm milk on a small bowl and mix until combined.
    15. Swirl the icing to your liking on the cake and allow it a few minutes to set and enjoy!
