Mini Oreo S'mores Cookies

These brown butter based cookies are gooey and chewy and everything you want in a cookie!

Ingredients

  • 1/2 Cup Unsalted Brown Butter
  • 1/2 Cup + 2 Tbsp Packed Brown Sugar
  • 2 Tbsp Granulated Sugar
  • 1 Large Egg (Room Temp)
  • 1 Tsp Vanilla
  • 1 1/3 Cup of All Purpose Flour(Spoon & Leveled)
  • 1/2 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1/2 Cup Semi Sweet Chocolate Chips
  • 1/2 Cup White Chocolate Bar
  • 1/3 Cup Crushed Oreo's

  • 1- 4oz Cookies & Cream Lindt Bar
  • 1- 4oz Milk Chocolate Bar
  • 6-12 S'mores Marshmallows
  • Instructions

    Makes 12 cookies and 6 cookie sandwiches but you can double the dough with no problem. Make sure your eggs are room temperature and this dough will come together beautifully!

    1. Prepare a large cookie sheet with parchment paper.
    2. Begin by cutting butter into cubes. Next, In a heavy saucepan heat butter over medium heat to begin the browning process. Stir constantly until the butter begins to turn into a golden brown color. It will be foamy and that is ok. Once the butter has reached that beautiful golden brown color remove from heat and place it on a heat safe bowl to cool.
    3. Once your butter has cooled Preheat oven to 350F
    4. In a large bowl combine your brown butter, sugars, egg and vanilla and whisk until combined.
    5. Add your sifted dry ingredients into the wet mixture and fold until just combined. Do not over mix.
    6. Add white chocolate, chocolate chips and oreo cookie crumbs and fold until combined. Do not over mix.
    7. Cookies need to be baked right away the dough does not store well.
    8. Drop the dough by tight 1 Tbsp dallops. Bake 12 at a time in a large cookie sheet with about 2" of space in between.
    9. Bake for 7 minutes or until golden brown on the bottom.
    10. Once the cookies are ready you can fix the shape with a smaller round cookie cutter or a cup.(Videos on my insta for reference)
    11. Once the cookies are out of the oven add more chocolate chips and oreos to your liking on top.
    12. Allow the cookies to cool completely
    13. Prepare a cookie sheet with parchment paper to set the s'mores cookie sandwiches as you make them.
    14. Once the cookies have cooled melt the milk and the cookies and cream chocolate separately in heat safe bowls but both in 15 second intervals mixing inbetween until it's melted. Place a small dallop of milk chocolate the cookie facing down and add the s'mores marshmallow.
    15. Place the marshmallow on top and carefully torch the marshmallow.
    16. Add another small dallop of chocolate over the marshmallow and place a cookie on top to make the cookie sandwich.
    17. Place the cookies in the fridge for 10-15 minutes.
    18. Dip one half of the cookies on the cookies and cream chocolate and place it on the cookie sheet with parchment paper.
    19. Repeat until you have prepared all of the cookies
    20. Refrigerate the cookies to set for 30 mins to an hour but allow them to come to room temperature before enjoying.

    TIPS

    1. This cookie dough CANNOT be made in advanced in needs to be baked right away it does not store well.
    2. Cookies will look a little undone once taken out they will finish baking in the baking sheet out of the oven. Allow them to cool completely to set.
    3. Baked cookies can be stored in the fridge in a tight container for 3-5 days and can be heated in the microwave for approximately 30 seconds depending on the heat of your microwave to enjoy later.
