These Dark Chocolate Blueberry Cheesecake Brownies are every chocolate lovers dream turned into the perfect Spring dessert.

Ingredients

Dark Chocolate Brownies

  • 6 Tbsp Unsalted Butter
  • 3.5oz Chopped Dark Chocolate
  • 3/4 Cup Granulated Sugar
  • 1/4 Cup Brown Sugar
  • 1 1/2 Tbsp Vegetable Oil
  • 2 Large Eggs
  • 2 Tsp Vanilla
  • 1/2 Cup All Purpose Flour
  • 1/4 Cup Dutch Processed Cocoa
  • 1/4 Cup Cocoa Powder
  • 1/2 Tsp Salt

Blueberry Cheesecake

  • 6oz Cream Cheese (softened)
  • 4 Tbsp Granulated Sugar
  • 1 Egg Yolk
  • 1 Tsp All Purpose Flour
  • 1/2 Tsp Vanilla
  • 2/3 Cup Blueberries
  • 2 Tbsp Blueberry Preserves

Instructions

  1. Preheat the oven to 350F. Prepare an 8x8 pan with non stick spray and parchment paper long enough to stick up from two sides to pull out when finished.
  2. In a large bowl add butter and chopped chocolate. Melt in the microwave in 45 second increments mixing inbetween until fully melted.
  3. While the chocolate butter mixture melts make the cheesecake batter.
  4. In a separate bowl add the cream cheese, sugar, egg yolk, vanilla and flour. Beat on Med-High speed for about 2-3 minutes until fully combined and set aside until ready to add to the brownies.
  5. Once the chocolate butter mixture has cooled, add sugars, eggs, vegetable oil and vanilla and mix until combined.
  6. Sift your dry ingredients and add them to the mixture. Mix until combined but do not over mix.
  7. Add chocolate chips and mix until combined
  8. Add the brownie batter evenly around the 8x8 pan.
  9. Next, mix the cheesecake batter one more time and add batter on top of the brownie batter on the pan.
  10. Add blueberry preserves to the blueberries and mix it well together.
  11. Add blueberry mixture in patches on top cheesecake filling and do a couple gentle swirls leaving mostly the patches on top of the cheesecake filling.
  12. Bake for 40-45 minutes. It will be a little jiggly in the center.
  13. Allow to mostly cool and wrap with plastic wrap.
  14. Refrigerate for 2-3 hours to set.
  15. After its set remove from refrigerator and allow to thaw for 1-2 hours so that it can be soft again to enjoy!
  16. Cut cheesecake brownies into 9 pieces and enjoy!
