Makes a 10" Cookie Skillet
- Begin by making the pistachio kataifi. On a saucepan on medium heat melt the two tablespoons of butter. Next, add the kataifi and stirring constantly cook until golden brown.
- Place the kataifi on a bowl and add the pistachio cream while the kataifi is still warm and mix until it's fully coated.
- Prepare a flat plate with parchment paper and add the pistachio kataifi spreading it into an even 6" circle and freeze it for about 1 hour.
- Once the pistachio kataifi circle is nice and firm make the brownie.
- Prepare a 10" skillet with non stick spray.
- In a bowl add the brownie mix, oil, water, egg and mix until combined.
- On a separate bowl add the chocolate chips and heavy whipping cream that are for the brownies to make a ganache and microwave in 35 second intervals mixing inbetween until they are fully melted and combined it should only take about 3 intervals.
- Add the ganache to the brownie mix and mix until combined.
- Add chocolate chips or discs and mix until combined.
- Add half of the brownie mixture to the prepared pan.
- Add the frozen kataifi to the center of the brownie mix thats on the pan and pour the remaining brownie batter on top.
- Add more chocolate chips or discs on top.
- Bake for 25-35 minutes or until the center is mostly set just a little jiggly.
- Allow the brownie to mostly cool.
- Completely optional sprinkle some sea salt on top.
- Top with ice cream and melted milk chocolate and pistachio cream on top or serve it separately on separate plates with crumbled pistachios.
