Pumpkin Cinnamon Roll French Toast
- Your choice of Texas Toast or French Brioche Bread
- 1/3 Cup Half and Half
- 2 Large Eggs
- 2 Tbsp Pumpkin Puree
- 1/2 Tsp Vanilla
- 1 Tbsp Brown Sugar
- 1 Tbsp Granulated Sugar
- 1/2 Tsp Cinnamon
- 1/8 Tsp Nutmeg
- 2 Tsp All Purpose Flour
- Pinch of Salt
On a Separate Bowl Mix Together and set aside
- 1 Tbsp Brown
- 1/2 Tbsp Sugar
- 1 Tsp Cinnamon

Instructions
- This makes 3 cinnamon roll french toast since we are making a bread sandwich with the filling in the center. This recipe can easily be doubled by simply doubling the ingredient list.
- If you are buying a loaf of uncut brioche cut the brioche into 6-1" slices and leave out on the counter uncovered over night or for a few hours to stale. This helps the absorption of the custard and to prevent a soggy french toast. You can also bake the cut bread for 3 minutes on each side on a 350F oven and allow to cool before preparing.
- Begin by making the cinnamon sugar filling by adding the softened butter, sugar and cinnamon and mixing until combined and set aside.
- Next, make the icing on a separate bowl add the cream cheese, butter, powdered sugar and spices and using a hand mixer whisk on low until just combined. Bring the speed up to medium heat and mix until combined and soft and add the half and half one tablespoon at a time mixing on low until it's fully combined and you have a beautiful icing. Set the icing aside until ready to drizzle on french toast.
- Were also making a cinnamon sugar we will be sprinkling on the bread once it's soaked on custard before placing on the hot pan. Add the sugars and cinnamon and mix until combined and set aside.
- Once the cinnamon sugar is ready make the custard on a separate bowl by adding the eggs, half and half, vanilla, sugar, flour and spices and mixing until combined.
- Heat a griddle or atlest a 10" pan to medium heat and prepare with butter or cooking spray.
- Spread 1/3 of the filling on one side of one sliced brioche.
- Top with the second slice of bread.
- Once the pan is hot soak the bread on the custard for about 10 seconds on each side and before placing it on the pan sprinkle one side with the cinnamon sugar mix we set aside. Place the bread on the pan and sprinkle the top side with your cinnamon sugar mix.
- Allow the french toast to cook on each side until a golden brown.
- Place on a heat safe plate and drizzle the icing to your liking.

Tips
